The design of this standard was based on the SANS 1255 Oven cleaner and degreaser standard developed by SABS, the South African Bureau of Standards, a leading global provider of standards, management systems, business development and regulatory approval information. This standard covers three types of oven cleaners and degreasers suitable for removing carbon deposits, grease, baked oils and other surface contaminants from industrial and domestic cooking ovens, grills, fryers and other steel kitchen equipment. However, these cleaning agents are not designed for use in self-cleaning ovens.

There are four main types of cleaning agents used in commercial kitchens: detergents, degreasers, abrasives and acids. Different cleaning agents are used according to the equipment to be cleaned, the cleaning method and the type of contamination on the equipment. Maintaining a regular cleaning and sanitation program is integral to preventing cross-contamination and foodborne illness.
