The only Clostridium species that reduces sulfate is Cl. perfingens . By definition, Cl. perfingens is an anaerobic, gram-positive, spore-forming, rod-shaped bacterium. In the food industry, it is referred to as 'Sulfate-reducing Clostridium' . Cl. perfingens is capable of fermenting many carbohydrates, while also reducing nitrate and causing gaseous fermentation in milk.

Cl. perfingens causes an illness called perfingens food poisoning. Perfingens food poisoning differs from other S. aureus and Cl. botulinum types due to the toxin it secretes. This illness can resolve quickly without requiring medical intervention. Therefore, it has been referred to as foodborne illness or infectious food poisoning.
Perfingens poisoning can occur due to reasons such as inadequate cooking, inadequate cooling or reheating in places such as workplaces, schools, hospitals, dormitories, prisons where meals are prepared for large numbers of people.
Since Cl. perfingens is very common in nature, thorough sanitation is necessary to prevent contamination. Alternatively, the easiest method is to consume food immediately after cooking.
The count of Sulphite-reducing anaerobes in foodstuffs is usually done by the Most Probable Number (EMS) method if the number of bacteria is too low to be counted by colony formation. After planting on suitable media from the dilutions prepared by EMS method, the reproduction results are checked and the number is calculated. The most commonly used medium is TSC Agar medium. According to the expected number, the pouring or spreading count method can be used. The formation of black color indicates the presence of sulfide-reducing Clostridiums.
