Sudan dyes are synthetic chemical dyes with a similar chemical structure. They are aromatic compounds containing an azo group. The main Sudanese red dye varieties are Sudan I, II, III and IV. It is often used for coloring substances such as hydrocarbon solvents, oils, fats, waxes and plastics. Sudan II and III types of these dyes are also used in cosmetic products and externally applied drugs. Sudan IV strain (also known as scarlet scarlet) is used in veterinary and human medicine as an ointment or dressing to heal wounds.

Determination of Sudan Dyes

In recent years, the adulteration of Sudan dyes in food has been causing much concern. After the detection of Sudan I-added pepper products in France in 2003, investigations on food products contaminated with Sudan dyes have intensified by food authorities around the world.

These Sudanese dyes, which have an intense orange-red and rich red color, are easy to obtain and low cost. However, Sudan I dye has been deemed unsafe for use in food based on toxicological evidence by the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) Joint Expert Committee on Food Additives. Although Sudan dyes have been reported as contact allergens and sensitizers, the greatest concern is possible carcinogenicity risks. The International Agency for Research on Cancer made an evaluation of Sudan dyes in 1975 and determined that subcutaneous application of Sudan I dye was carcinogenic, producing liver tumors and bladder tumors.

In recent years, concerns about the genotoxic potential of Sudan dyes have been raised. While some national organizations and food authorities recognize Sudan dyes as genotoxic carcinogens, some organizations consider these Sudan dyes as possible carcinogens. However, today Sudan dyes are widely used in production to impart a rich red, red-orange or yellow-orange color to plastics and textiles. For example, it is used to increase the presentation of spices such as chili pepper, paprika and curry paste.
